Vegetarian and vegan food may be trendy, but it is not a modern phenomenon. As early as the 11th century, St Francis ate an exclusively vegetarian diet, and the vegan doctrine can be traced back to St Francis of Paola, who preached total abstinence from meat and animal products. Nowadays, renunciation of meat and animal products in general is not only due to a great solidarity with animals, but also to a more conscious lifestyle in general.

Vegetarian and vegan does not automatically mean healthy, but very often the health aspect is paramount, and factors such as environmental awareness and the desire to make an active contribution to combating climate change are also motivating young people in particular to change their diet. Vegetarian dishes have always been present on South Tyrolean menus, just think of the many varieties of dumplings, and vegan dishes are becoming increasingly popular.
